This will be a fun hands-on class for those who want to learn how to preserve seasonal food using the hot-bath canning method. We will cover three basic canning methods, safety and get right to work with the just emerging local spring foods.
This is not your run-of-the-mill canning class! Students will learn about creating a sustainable pantry by using what is in season and preserving our local organic harvest in several different methods, including a water-bath canning method, a pickling method and preservation in alcohol.
Students will all get a chance to create three different recipes, try their hand at the canning process and go home with one of each of the three batches, which will likely include a: local organic strawberry preserve or jam, preserved organic lemons, a seasonal citrus extract and/or dandelion jelly (if it is in season early enough)
A light snack will be served in this 3 1/2-hour class, and all materials are included.
