ON-SITE INTENSIVE: INTERNAL PREPARATIONS – MYCOLOGY

This is a 3-day on-site intensive for students to have even greater depth of training in certain specialty areas.  These are designed for apothecarists that would like to create a product line or specialize in a certain area of herbal preparations.

Mycology and Herbs: Learn everything you need to know in order to begin adding potent mycellium into your herbal preparations. This intensive will cover medicinal usage, preservation, and preparations methods of mushrooms for your apothecary.

Sam will demonstrate multiple extraction techniques, and the class will do multi-fractional extracts of several different types of mushrooms.
Also covered will be the combination of mushrooms and herbs in various formulas and extractions to obtain good tasting and clinically potent mushroom extracts, blends, teas and other preparations.

PROGRAM INFORMATION:

The Apothecarist Program is an 18-month intensive study program (both online and on-site) that explores the processes of making herbal products as a profession.  In addition to the history of the apothecary trade, students will get extensive training in the making of both internal and external herbal preparations as well as important product regulation information every practicing apothecarist should know.The program is divided into (2) interactive online sections and a total of (6) on-site intensives.

This is an online interactive workshop! You can take this anywhere you have an internet connection. You do not have to be present in our area to take the class! We send out a box of materials to you in advance, and together we’ll make several types of herbal tea in the live webinar!  *if you can’t make the live class, you can download and listen to the webinar afterwards with your box of wildcrafted herbal materials!

One of the simplest forms of creating herbal medicine is making tea infusions.  In a matter of minutes, fragrant tea leaves, aromatic flowers and woodsy herbs can be combined and steeped  into warm water to create infusions for health and vitality.

This online workshop opens the door to the art of mixing medicinal herbs with fragrant plants and rich flavors – showing you how to make blends that anyone will love to drink!

Students will work with a wide botanical palette that will be filled with deeply fragrant blossoms, delicate spices, brightly dried fruits and smoky roots, berries and medicinal plants.

The workshop will cover :

  • How to create flavor profiles and combinations
  • Different types of tea leaves and how to weave them into your formulas
  • How to mix bitter herbs into pleasing formulas

HERBAL ICE CREAMS, SHERBERTS AND SORBETS

This fun 3-hour workshop will teach students how to make delicious and healthy frozen treats using edible flowers, herbs and natural ingredients. Learn how to stock your freezer with herbal popsicles to cool during hot summer days, creamy and naturally flavored sherberts and ice creams and more.

You will learn:

  • How to make sumptuous creamy herbal ice creams
  • The process of making a sunny herbal dreamsicle
  • How to combine herbs for summer cooling herbal ices
  • Dairy and sugar free options for cool treats

During the workshop, everyone will taste samples of herbal ices, sorbets and ice cream blends while making several creations using churn and no-churn methods for quick gratification and happiness-on-demand! Students will go home with recipes for an herbal dreamsicle, botanical ice pops, creamy herbal ice creams, and will also take home a small container of ice cream made in the workshop!

Food and Health. 

Seems simple, but is it…really?

In this 8-week course, we will be exploring FOOD.  We will start to peel apart the different roles that food has on the health of our body.  When we view food as an energy source, as information to our DNA, and as medicine (rather than something to fill our stomachs,) it will help to open the doors to be able to further explore the results of making wise or poor decisions about food.

We will look at modern agricultural practices and how this effect our food even before we make our first food choice.  Organic, Raw, Paleo, Adkins, Gluten-Free, Vegetarian, Vegan, Super Foods, Low Fat, Low Carb and the list goes on and on…  We will discuss basic tenets that many of these diets have in common, and develop some general lifestyle recommendations to help guide our food choices.

We will examine what the literature is saying about controversial topics like genetically modified foods, High Fructose Corn Syrup versus Sugar, artificial sweeteners, and the link diet has to specific diseases such as ADD/ADHD, cardiovascular disease, diabetes and dementia.

We will look at common micronutrient deficiencies plaguing the US now and their link to various diseases.

You will learn about certain physical findings and simple lab tests that could give us a clue about our nutritional status.

Food has the ability to cause disease or to cure disease. Opening our eyes to the extraordinary effect food can have on our lives will empower us to start the journey towards better health for ourselves and our families.

Introduction to Clinical Nutrition covers 20 hours of class time. In this 8-week course we will cover:

– Introduction to functional medicine & clinical nutrition

– Basic Tenets of Health Eating (The Big Picture)

– Nutrition 101

– Macronutients: carbs, fats, proteins and fiber

– Label Reading

– Phytonutrients

– Sugar, HFCS and other sweeteners

– Sodas

– Water & Other Beneficial Drinks

Class Information: Course materials will be available for download every Monday morning.  We will have two scheduled live sessions with Dr. Kyla Helm (tentatively scheduled for October 3rd and November 7th, 7pm central time) as well.  A final test will be released in the online classroom on the last week of classes, October 28th.  Students will have open access to all materials and the test until December 2, 2019.

Course Dates: Course opens on September 9th.

Registration for this course will end on September 30th, 2019.

The Clinical Nutrition 1 course will satisfy the Nutritional requirement in the Clinical Herbalist and Family Herbalist programs.

Therapeutic Essential Oil Distillation and Infusions: With the recent surge in popularity of essential oils comes the questions regarding safety, processes and therapeutic applications.  This intensive will cover the basics of distilling your own botanicals for therapeutic use, making hydrosols and the best ways to bring this intensely powerful tool into your apothecary.

During the 3-day course, students will get hands-on training with:

• Learning safety practices for working with essential oils and hydrosols

• Wildcrafting medicinal herbs for use in distillation

• Distilling of medicinal therapeutic-grade essential oils

• Hydrosols: creation and storage and usage

• Packaging and storage of essential oils for use or sale

• Discussing carrier oils and how to make your own

• Essential oil blends and formulas

• Applications of oils in products

• Several different methods of essential oil distillations

• Working with various forms of botanical materials for a distillation

External Herbal Preparations: This is a fun and collaborative course. Students will get hands-on experience in making everything from herbal honeys, vinegars and gummies to experiencing a tincture tasting bar, concocting bitters, teas and tonics — all designed to be end products that apothecarists can market for purchase.

Food As Medicine:

This is very different than any cooking or any herbal medicine class you’ll find, as it is a marriage of both! Over 3 days, this course will cover everything you’ll need to feel comfortable working in a brand-new way using food as your medicinal tool!

Setting up a safe kitchen at home or in the field. Basic food safety.

Move towards Better; Meet people where they are–including yourself. Food is part of a system for balance, by nourishing the body with nutrient dense foods and eliminating harmful foods, we put the body in a position to better assimilate everything we put into it, from food to medicines.

  • Making Sense of Food Systems: Ayerveda, TCM, Blue Zones, “Traditional” foods (Weston A. Price)
  • Western Pattern Diet: Define; Why is it a Problem?
  • Food Ethics: Why is this important to consider? Watch Chef’s Table, Episode 2 if possible
  • Culinary Materia Medica: Herbs commonly used in the kitchen and what they do for the body.
  • Healing Recipes: Yogurt rice; “I’m Sick” tea, condiments, beverages, etc.
  • Learn to Cook: (Re)Educating the Palette

Step 1: Easy Substitutions

Step 2: Introduce fermented foods

Step 3: Condiments–lower intake of salt (and processed salt) and sugar.

This is a fun 3 hour hands-on workshop offered once a year as part of the Apothecarist and the Provider programs.

This 3-hour workshop opens the door to the art of mixing medicinal herbs with fragrant plants and rich flavors – showing you how to make blends that anyone will love to drink!

Students will work with a wide botanical palette that will be filled with deeply fragrant blossoms, delicate spices, brightly dried fruits and smoky roots, berries and medicinal plants.  We will have a ‘tea bar’ for students to sample dozens of different tea ‘simples’ while working on their own blends.

The workshop will cover :

  • How to create flavor profiles and combinations
  • Different types of tea leaves and how to weave them into your formulas
  • How to mix bitter herbs into pleasing formulas
  • Thinking outside the box: using spices, flowers, roots and fruits in your tea!
  • Making blends that are powerful medicinal formulas

All students will go home with a ‘palette’ chart for future tea-blending sessions, a metal tea ball, tea canister and your own woodland chai tea blend made in class.
